Paneer Kathi Roll

INGREDIENTS: The ingredients required for the recipe are listed below

For Paneer Marination

▪ 8 tablespoons yogurt

▪ 400g paneer (if making at home, paneer from 1 ltr of milk will make about 400g to 500g paneer)

▪ 1 inch ginger + 3 garlic cloves (grind to a paste in a mortar pestle)

▪ 1 lemon

▪ 1/2 teaspoon ajwain (carom seeds)

▪ 1/3 teaspoon turmeric powder

▪ ½ teaspoon coriander powder

▪ ½ teaspoon cumin powder

▪ ½ teaspoon garam masala

▪ ½ teaspoon amchur powder

▪ ½ teaspoon chaat masalala

▪ ½ teaspoon Kashmiri red chilli powder

▪ Black salt (sanchar) or rock salt as per taste

Green Chutney

▪ 1.5 cup coriander leaves

▪ 1 green chilly

▪ 1.5 inch ginger

▪ 3 to 4 garlic cloves (medium size)

▪ ½ teaspoon amchur powder

▪ ½ teaspoon cumin powder

▪ 4 tablespoon curd

▪ 1 or 2 teaspoon water (if needed)


▪ 1 small size (approx. 150g) cabbage (shredded)

▪ 2 medium size onions – long, thinly sliced

▪ 1 medium size capsicum – thinly sliced (optional)

▪ 1 medium size carrot – shredded (optional)

For the Rotis

▪ 2 cups whole wheat atta

▪ ½ teaspoon salt (add according to your taste)

▪ 1 tablespoon oil

▪ 1 cup Water (add more if needed)


This is a quick and simple 6 step recipe

Step 1: To marinade the Paneer (Cottage Cheese)

1. In a bowl, we will mix the yogurt and masalas along with the ginger garlic paste.

2. Mix very well until its blended into smooth paste without any chunks of masala.

3. Taste and add salt if needed.

4. Add the paneer and mix gently making sure that the paneer is fully covered in the marination.

5. Cover the paneer marination and put in fridge for 30 minutes

Step 2: While the marinated paneer is in the fridge, please prepare the roti dough (make sure that the consistency is not too firm and not too loose. It should be a similar to paratha dough).

Step 3: Cover the dough and let it rest for 15 to 20 minutes

Step 4: After 30 minutes, we will take marinated paneer out of the fridge. In a pan heat about 3 tablespoons of oil and add the entire marinated paneer. Let it cook for about a minute or two then turn the paneer cubes to cook on the both sides evenly. Keep stirring and turning until it gets a beautiful tandoor texture. Simmer for about 5 minutes and take out the cooked paneer in one bowl.

Step 5: Make medium size chapattis’ which is not very papery in texture. The consistency should be soft, put the chapattis’ in a casserole.

Step 6: To make the green chutney

1. Please make sure the coriander is washed very well. Please wash 2 to 3 times.

2. Mix all the ingredients mentioned in the ingredients to a smooth paste.

3. Add water if necessary. The chutney should be of a semi-thick consistency. Make sure it does not get watery.

TO SERVE: Take the roti and spread the green chutney over it. Then we will add the cooked paneer to half of the roti, so we can roll it easily. You can also put the paneer in the centre. Top it with vegetable salad like green onions, red onions, bell peppers, carrots, beet and other vegetables you like. Then slowly roll from the side where you have placed the paneer to the other end of roti to make a wrap. Serve hot.
